Salmon is one of the most popular bluefish in the world.

The first thing we will do is preheat the grill to medium-high heat.
Meanwhile, we will squeeze the lemon and grate the peel.
In a small bowl, mix the olive oil, lemon juice, lemon zest, chopped garlic, salt and pepper. Stir well, until we have an emulsion.
We arrange the salmon fillets in a bowl or on aluminium foil and, with a cooking brush, spread the mixture of oil and lemon well on both sides. We then place them directly on the already hot grill. The magic begins!
Cook for 4-5 minutes on each side or until the grilled salmon is “sealed” (looks opaque) on both sides and comes off easily with a fork.
Avoid flipping the salmon too often as this could cause it to crumble. Instead, ideally wait for one side to cook before turning it over.
We highly recommend leaving the salmon ‘mi cuit’, that is, leaving the centre half raw, ensuring it is very juicy.
But if you prefer your salmon more cooked, no problem! You can leave it a few more minutes. Of course, you should monitor the time well so that it stays juicy and does not dry too much.
Once the salmon is cooked to our liking, we remove the fillets from the grill and place them on dishes.
The final touch: cover the salmon fillets with the lemon sauce and sprinkle the chopped coriander on top. We can use lemon slices for decoration.
We serve the salmon immediately and accompany it with our favourite garnish, such as basmati rice, a lettuce and tomato salad or grilled vegetables. Bon appétit!

In a small bowl, mix a 1/4 cup of fresh lemon juice, 2 tablespoons of olive oil, 1 tablespoon of honey and 1 teaspoon of Dijon mustard.
Add salt and pepper to taste and mix well until the sauce is even.
Cover the bowl with clingfilm and put it in the fridge for at least 30 minutes before serving.
